Shiitake-Onion Soup*

The dried brown buttons of shiitakes may seem costly but their bold flavor and meaty texture add immeasurably to soups and stews. Because the stems are less flavorful, use only the caps.

At home, mix well:

1 teaspoon bouillon powder

1 teaspoon potato starch

ΒΌ teaspoon sugar

Add:

3 tablespoons dried sliced or broken shiitake mushrooms, stems removed

2 tablespoons dried onion

On trail, place in insulated mug or bowl and add:

1 cup boiling water

Cover and let stand 10 minutes.

Servings: Makes 1 serving of 1 cup.

Nutritional information: 67 calories, 1 gram fat, 16 grams carbohydrate, and 1 gram protein.
